Cozonac, a traditional Romanian sweet bread

For today I want to share with you the recipe for a Romanian traditional cake called cozonac. 

The cozonac is the most popular cake in Romania. It is mostly baked for Easter and Christmas dinners but not necessary. 

Ingredients 

1 kg flour 

50 g yeast 

250 g sugar

400 ml milk

100 g melted butter

4 eggs 

vanilla extract 

2 lemons' peel 

Preparation

In a large bowl add the flour and make a hole in the middle. Put the milk, sugar and vanilla extract on the stove to heat but not boiled. Just until the sugar melts. 

Add the yeast in the milk,  a little flour and wait 10 minutes. 

Mix the egg yolks with the salt, the lemon peel and add this mixture in the flour bowl. Now add the warm milk and butter and start to knead the dough with your hands or a mixer. 

After leave the dough to rise for 30 minutes. Cover it with a towel and put in in a warm place. 

The filling 

This traditional sweet bread needs a filling. 

300 g Turkish delight (you can skip this one if you do not like it)

150 g walnuts 

100 g sugar

50 g cocoa

The walnuts must be chopped or minced. Mix them with the cocoa, sugar and Turkish delight. 

Roll the dough. Add the filling and form an oval shape like a bread. Put the dough with the filling in a tin pan. 

Before putting in the the oven smear it with egg yolk. 

Now put it in the oven for an hour at a medium temperature.
